You & Me opens new location at Baptist Health Corbin

You & Me Coffee & Tea is expanding in Corbin, as its second location opened Monday in the lobby at Baptist Health Corbin.

Owner Andy Salmons said there had been several casual conversations with hospital officials over the last two years about locating a specialty coffee and pastry stand at the hospital.

Earlier this year, Salmons said the discussions became more detailed and an agreement was reached.

The stand is located inside the outpatient entrance to the hospital.

“This seemed like a central location,” Salmons said when asked how the location was chosen.

The stand offers all of the hot and cold beverages, including smoothies and frappes available at the downtown location, along with pastries.

Salmons said the endeavor has been well received, especially by hospital employees.

“We have been complaining for a long time about wanting specialty coffee,” one employee said as she waited on her order Monday. “It is nice to have them, especially since it is local.”

Salmons said the stand would initially be open 7 a.m. until 7 p.m. Monday through Friday.

“We will be looking to expand them if the demand is there,” Salmons said.

Salmons said he would be interested in opening similar locations in the area if other businesses or organizations expressed an interest.

“We are definitely open to working with anyone else,” Salmons said.
